Coconut Flour Waffle Pizza

I have yet to adhere to the meal plan I posted in my last blog. I need more than 1,500 calories/day, as I assumed, and I received a Trader Joe’s goody bag from my mother, containing oatmeal, spinach tortellini, alkaline water and coconut flour, for pet sitting her shi-tzus the day I meal prepped. So naturally, I added tortellini, oatmeal and coconut flour concoctions to my meal plan, which was lacking calories and carbs anyway.
When asked what I was having for dinner upon leaving the gym tonight, it was slightly awkward trying to explain my grand plan. That plan being, to make pizza using coconut flour for crust and my homemade peanut butter chocolate ice cream, when it would actually be tomato sauce and mozzarella atop a coconut flour-based waffle and my healthy, yet boozy, ice cream. I hadn’t tried the waffle pizza before, but I thought it was good!

Coconut Flour Waffle Pizza:
5 T Coconut Flour
1 tsp Baking Soda
¼ tsp Salt
2 T Olive Oil
4 T Unsweetened Almond Milk
4 eggs
I mixed these then cooked it in my waffle maker. When cooked, I placed it on a baking sheet, topped it with tomato sauce and mozzarella cheese then broiled it for a couple minutes to melt the cheese.
